   Your "Back Of The House" is vital to your very survival. That is a given. It is also a fact, that your "BOH" is your mostly costly, most crisis driven, most challenging, most chaotic element of your entire food and beverage business.
 Because, when you look @ your bar, forget drink specials, cheap beer, put your entire focus on "THE NIGHT LIFE" after, I repeat, AFTER the Food Service ends, the "FUN", "WOW FACTORS" @ 10pm, BEGIN.
Move the tables and chairs out, create a dance floor, bring in either a quality DJ or high energy upbeat band, you make more money, you bring in huge crowds, because your taking your "Bar & Grill", your "Restaurant" out of it's normal food format and enhancing it.
Some Owners have responded to me, "It's going to hurt my food business".
They could NOT BE MORE WRONG.
How is offering a Night Life Adventure" after your food service ends @ 10pm, when your dining patrons have left, are home zzzzzzzzzzzzzzzzzzzzzz, does this have any effect on their experience dining?
It doesn't now and never has.
From Four **** dining rooms, to upscale marble floor, linen table cloth, Tuxedo Maitre D, dining venues, I have taken hundreds of these fine dining establishments, and added the missing exclusive elements of "FUN", "WOW FACTORS" and "FAB".
The mental challenge for Owners of these fine dining destinations is, the ability to accept, appreciate, acknowledge that rather than be a negative, it is all positive.
Of course there is no need for a club promoter, that is when the negativity permeates the night.
There is no cause for lowering drink prices, that is what creates the wrong image.
There is no need to abandon a dress code, that is what attracts the wrong type of night life patron.
There is a MUST to charge a cover charge, again, this brings in the class, thus avoiding the trash.
The pitfalls are featuring the same DJs that spin or have spun everywhere in your area.
Presenting the same bands that play anywhere and everywhere in your area.
Wasting valuable marketing dollars on newspaper ads, or radio spots.
Newspapers are read online by over 70% of all daily newspaper readers.
Radio is at 1/6th the Power, Potency, it once had.
Tampa Bay, Florida one of the top 30 radio markets in the US, recently converted it's format from Classic Rock to All Talk Radio. Clear Channel is consolidating their programming to the point, where one DJ will broadcast and syndicate to dozens and dozens of markets.
Radio salespeople push a 30 second spot on you, the problem is nobody listening, can even remember what the content was in a 30 second spot. The Radio Stations do not want to run 60 second spots for fear of losing the limited listeners they do have.
So how to reach this Night Life Adventure Guest?
Your a "Bar & Grill" you have your screens, you show sports.
You have your regulars who have their tuchus impression on their bar stool.
But @ 10pm, your empty. That is why you enhance, expand with dynamic, Night Life.
Your an "Upscale Eatery, you have a bar, you have plenty of room to host four nights a week of attracting beautiful Women, and Men who spend.
I was asked by an Owner of a huge, beautiful Restaurant & Bar, to suggest the process by which he should enter the World of Night Life. He had his food service @ excellent.
But, he noticed early on, that once dinner was over, his dining guests were leaving.
He tried DJs, he tried bands, he listened to everyone and anyone, but no one who knew what they were talking about. I provided him the insight that required his discipline, relentlessness, consistency to become the Premier Place to Party. Within 45 days, he was packed, four nights a week, and was not only a dining destination, but a the "Brand New Hot Spot" in his area.
Owners have to grasp the fact, that once they are packed, some other "After 10 Night Spot" is losing it's guests. There are only so many Party People that go out @ night. Your not creating new business, your emptying out some competing venue's usual busy nights.
That's exactly what happens. Loyalty is for bartenders who work day shifts, happy hours, not @ night, when the lights over the dance floor are laser, when the "FUN" begins, when the "WOW FACTORS" take over.
This evolution, does not happen overnight. Far too many Food Only Owners, want instant gratification. But the "AFTER 10pm" Market is not simply saying HERE WE ARE!
You have to be innovative, inventive, and in demand. You have to create that "ENERGY", that "IMAGE", that "ATMOSPHERE" that "FORMAT" that dominates the mind of those who love the "NIGHT LIFE". I have done this so many times, it comes naturally to me. Forty Years of taking destination locations as well as right in the middle of the traffic flow establishments, giving Owners of "Bar & Grills", as well as "Sports Bars" and of course Fine Dining Establishments, a new Four Night "FUN FILLED", "WOW FACTORED", "FAB INFUSED" Format, that is ever evolving.
Why struggle every day and evening with the "BACK OF THE HOUSE" challenges, when you can also relax with the "FRONT OF THE HOUSE" ease?

WHY DO RESTAURANTS IGNORE HEALTHY FOODS?
DON'T COMPROMISE, SURPRISE YOUR DINING GUESTS WITH GREAT TASTING HEALTH INFUSED FOODS!  
   With the entire Nation's Media focused on eating healthy, who said it had to taste bad?
   WITH AMERICANS WANTING HEALTHY CHOICES IT'S YOUR TURN!
Why can't you take your present dishes and make them healthy as well as tasty?
Gluten Free, where are your dishes, breads, many people are even allergic to gluten. 
Sodium is a major health risk. Deny it, Defend it, if you just cut your tablespoon of Salt down to a Pinch, you would be serving 100% healthy food.
The Oil you use to fry with. If you just changed your oil to Canola healthy oil, you would be serving 100% healthier fried foods.
The Sugar you add, if you just changed to a viable, proven safe, sugar alternative, almost nobody would taste the difference.
The Fat, Why not trim the fat off the bone, the customer can't eat the fat, so why serve the fat?
The Bread and Rolls you serve, if you just gave your guests a choice of great tasting non white flour rolls and breads, you would be offering healthy, great tasting rolls and bread. 
Instead of Frozen Foods, Fresh Foods, instead of canned foods, fresh foods, you would be serving healthy foods.
The words, "LITE", "REDUCED", "LOW", "ZERO", "50% LESS", "LESS FAT" ARE not some fad. They are the harsh, stark reality of a majority of today's dining patron. 42% of America are OBESE. Their hearts, their kidneys, their blood sugar, don't you care? Why do you charge more for a healthy dish, than a non healthy dish? Why discriminate against those trying to stay fit and be fit?
Where is your "VEG BURGER"?
Where is your "TURKEY BURGER"?
Why always Red Meat?
WHY NOT SHOW SOME "COOKING CARE", AND SHARE WITH YOUR DINING GUESTS, LESS OF EVERY INGREDIENT THAT IS NOT SO HEALTHY OR NOT HEALTHY @ ALL FOR THEM TO EVEN BE EATING.

YOU WON'T REFORMAT, REVAMP, REPOSITION, REINVENT, RENEW YOUR ESTABLISHMENT, BECAUSE OF FEAR, EGO, ARROGANCE, OR LACK OF KNOW HOW.

MY RESPONSE:
                             MARTY, I do not recommend club promoters for any establishment, in any city, for any reason.
I hear nothing but horror stories from bar, club, lounge Owners about their experiences with whom I call "club demoters". Marty, so let's be clear about this, your in a major City, you have a great location, but you feel the need to take on another partner to pack your bar? You want to take your rent, your payroll, your insurance, your "NUT", and add another payout to what you already are pulling your hair out over paying? You think these club demoters wave a magic wand, and all of a sudden your packed?
You believe they are your path to "OZ"?
Marty, you could not be more wrong.
Unfortunately the club promoter industry is not regulated, so therefore anyone, anyone can claim to be the #1, Best Of the Worse in packing bars, clubs, lounges. You are so desperate to believe, that without any background check, any strict guidelines by which to control their flow, you give them literally the keys to your establishment, and let them do their typical flyers, post on a Facebook Page, Try the very few limited ways they know, to bring a Thursday Night to WALL TO WALL PEOPLE, including lots and lots of women.
Marty, the chances of this happening are as good as Tiger Woods, returning to greatness.
Marty, I would never ever suggest, recommend or advise you to work with or under a club promoter.
What I would without hesitation guide you to, is finding a Legal Age College Student, hip to the current trends in Fashion, Music, Lifestyles, Entertainment, majoring in Marketing, who is into the bar/club scene in your area, then give them the designation, Promotions/Marketing Assistant. Let them earn, prove, show you they know what to do, thus earning their way to the title "Director".
Never, ever take an employee and give them "X" amount of days to pack your bar, your club, your lounge, your sports bar, when you know very well, they have very little chance of succeeding. I am often contacted by employees who want to do more to increase business in the bar, lounge, bar and grill they work at, but they are only given a very short window of time to accomplish the next to impossible. Marty, you own this bar, it has tremendous potential, but to depend on, rely on, trust others to run your nights, with you simply waiting for the motherlode of cash flow makes no sense, is flawed logic and puts your entire business, your investment, everything @ great risk. Why do you own a liquor establishment if your not willing to pack it yourself? This is not an outsourcing business. Marty, you may justify this erratic  risky way of operating your nights as your golden opportunity, but it is going to be a real  financial nightmare. Perhaps your the kind of Owner who has to learn it to own it. YOUR HESITATION, YOUR PROCRASTINATION IS COSTING YOU MORE REVENUE, THEN YOU EVEN KNOW.
 
THIS MEMORIAL DAY, KICK OFF TO SUMMER WEEKEND, SHOULD BE A $25,000 THREE NIGHT CELEBRATION FOR YOUR ESTABLISHMENT, ESPECIALLY WITH NO WORK ON MONDAY. UPDATE:
LAST MONTH, I WROTE ABOUT A RESTAURANT/CLUB HOSTING A 17 PIECE BAND, CHARGING JUST A $5 Cover Charge.
Sad to Report, this establishment owes over $6,000. in past due liquor bills. This establishment is on the "CASH ONLY" LIST.
They cannot buy any liquor, beer, wine, unless they pay cash, until  make good on all these invoices, MEANING = paid. I tried to suggest to this Owner, that the numbers did not work, the format was not profitable, the nut was not attainable. Why do Owners refuse to listen  to the best, but would rather listen to the less, who know NOTHING?
