SEPTEMBER 2016 - BARS, CLUBS, EATERIES, MILLENNIALS WANT "CRAFT"!
The Times have certainly changed.
Every Drink Segment of your establishment, from "Sodas", to "Infused Waters", to "Wines", "Specialty Drinks", "Cocktails", and of course beers, should all have "CRAFT" Choices.
When serving Food, once again, "CRAFT" dishes are in demand.
Even down to your "Entertainment", YUP, "CRAFT" is the "KEY".
Millennials want what generations before them never did.
They want Quality, They want Fresh, They want Energized, and they want "Custom CRAFT". This is not the time to be complacent.
Your Drink Menu should include Classics and Custom Drinks, served only @ your Bar.
Where is your Tremendous "Party Potion Pitcher"?
Your Bar needs to "STAND WAY OUT" from the rest
of the local watering holes.
There are so many new liquors, liqueurs, that brands have rolled out, you carefully pick and chose those that will compliment your "Magnificent Mixtures", Menu.
Your Bartenders should be creative, innovative.
In Your Kitchen, from Seafood, Poultry, to Steaks, Prepare them with "CRAFT" tastes.
Out with the usual, In with the Fresh to Table, "Only Served At", "This is our "Craft Dish Menu".
Your Chef should take five dishes, and "CRAFT" THEM.
Every Bar, Every Restaurant and all those Establishments in between are defined now by "CRAFT".
Your Menus, Your Atmosphere, Your Entertainment, Your Name, Your Logo, Your Image, Your Social Media Presence, are all part of your "CRAFT".
"Ruby Tuesday" is closing 95 Units. They ignored "CRAFT", they played up their "Salad Bar", their pricing was way over the top, the servings way under the bottom, and in between, they just remained the same.
They never ever thought of exciting their bars with "CRAFT", nor their food with "CRAFT". Just for Starters.
It's like bars that are still "CASH ONLY", they ignored Credit Cards, Debit Cards, Bank Cards, Corporate Cards.
Now they ignore "Smart Phone Pay Systems", they still think they can fool those who they pay taxes to, by only taking cash. That's the biggest RED FLAG, there is.
But beyond that aspect, they are also chasing business away.
People, Patrons, don't carry cash like they use to.
No need to any longer.
That's why bars, clubs, sports bars, gentlemen clubs, restaurants w bars, lounges, hotel bars, beach bars, become antiquated and dinosaurs.
And that's why they CLOSE....................................
You have been in the business all your life, you think you know it all, but then, your numbers are down, new competition is hurting you, those radio ads, the newspaper ads, just don't work anymore.
Your so far behind the times, because you refuse to get ahead of time.
"CRAFT" is "THE WORD", The defining Characterization of what Today's Food and Beverage Format is all consuming.
You can keep operating in your bubble, and lose more, and more money, but then in the end, you will realize it was all about "CRAFT". But you chose to go against the tide.
Or, you can STOP, Look, Listen, and ACT?

What did "PEPSI" do to try to generate fresh new soda drinkers?
They brought back their "Clear Cola".
KFC took no time in showing off their "DOUBLE DOWN", a dandwich made with two boneless chicken filets on a bun.
It's all about manipulating Social Media to "hype the Food Fantasy", while putting the Brand in play on Twitter, Facebook and Instagram. What have you done in your bar, or restaurant to take an ordinary drink or dish and make it "EXTRAORDINARY" to capitalize on Local Media, Social Media, thus resulting in Tremendous Foot Traffic and fresh new cash flow?
As The Late, Great Nelson Mandela said " It's only impossible, until it's done".
Stop having SLOW Days and Nights.
Stop being fearful, but be FEARLESS.
RESTAURANTS, YOU DO NEED APP, TO DELIVER!
Restaurants, WITH OFFICE/HOME Delivery becoming a huge revenue segment, it is imperative, that you create an ""APP" for your delivery Service.
It's the best investment, you can make, with regard to creating a major "DELIVERY IMPACT" in your local Community.
"Pizza Hut", "Domino's" are doing "Absolutely APP" Biz, all day and night.
Millennials live on, by, at, their "Smart Phone". They don't use land lines, they rarely make phone calls.
It's all about "APPS", "Texting", "Video".
Your "APP" has to be easy, fast, intelligent, to use.
We are not reinventing Facebook.
Don't be taken for a financial ride by some "APP Designer".

Yes, You can implement a new Cover Charge without 99 out of 100 of your Patrons even complaining.
I have done it for decades.
There is a method to the madness of implementing a new Cover Charge, with the least amount of resistance.
Live Music, Wednesday, Friday, Saturday,Reggae on Sundays.
EVERYONE PAYS THE COVER CHARGE.
OWNERS STAY AWAY FROM THE FRONT DOOR, LET YOUR FEMALE HOSTESS PRESENT THE COVER CHARGE.
NO ONE UNDER 21 ALLOWED IN.
BEFORE HIRING A BAND, GO SEE THEM IN PERSON.
REVIEW THEIR SET LIST OF SONGS PERFORMED.
LOOK @ THE QUALITY OF CUSTOMERS THEY ATTRACT.
HOW MANY ARE WOMEN?
ARE THE CUSTOMERS, EATING AND DRINKING?
ARE THE CUSTOMERS "INTO" THE MUSIC?
DOES THE BAND HAVE A "HIP" APPEARANCE?
DO THEY CURSE ON STAGE? ( DON'T EVEN BOOK THEM)
ARE THEY WIRELESS?
DO THEY HAVE A FEMALE LEAD SINGER, WHO IS ENERGIZED?
BOOK BANDS YOU CAN BOOK DIRECTLY, WITHOUT BOOKING AGENTS, YOU DO NOT NEED THE ADDED EXPENSE.
MAKE SURE THEY DO NOT PLAY WITHIN A TEN MILE RADIUS OF YOUR BAR OR CLUB FOR A MONTH AHEAD OF YOUR BOOKING & THREE WEEKS AFTER YOUR BOOKING.
YOU WANT TO FIND BANDS, THAT WILL LEARN TWO TO THREE NEW SONGS EACH TIME THEY RETURN TO PLAY AT YOUR VENUE.
YOU DO NOT WANT THE SAME BANDS WITH THE SAME PREDICTABLE SONGS IN THE SAME ORDER, COMING BACK EACH TIME.
NEED MORE EXPERTISE?
